Process & product GUIDE 09
Fruit preparation: Decide between pieces, purée and juice first
Plan fruit preparation around the required product form, with clear washing, sorting, stone separation and extraction duties before the next processing stage.
The right fruit preparation line depends on the form in which fruit must reach the next process. Whole or cut pieces, purée and juice require different decisions. FRUMAK's preparation range includes washing, sorting, cutting and pressing. The effects and incoming conditions of a stone brushing machine or turbo extractor need separate consideration. A process that changes fruit form should not be selected while assuming that whole-fruit appearance will be preserved.
Preparation may appear to be an auxiliary section ahead of the main production equipment. In practice, it establishes the form of the material that downstream processing receives. Once fruit has been broken down or turned into pulp, a later machine cannot be expected to restore its original shape.
Place the incoming fruit, required intermediate material and target final product side by side when preparing the enquiry. This is a more useful starting point than equipment names alone.

Define the preparation line's outlet first
Washing and sorting may be common starting duties, but subsequent operations depend on the product. Fruit prepared for jam containing pieces does not have the same outlet definition as fruit prepared for a smooth marmalade. For juice, identify the requirements of the following pressing or processing stage.
Apricot provides a practical example. Preparing it for marmalade and preparing it for a product with visible pieces do not create the same acceptance target. Asking only for stone removal without explaining the final product can lead to a discussion of the wrong equipment approach. Samples help clarify that distinction.
Understand what stone brushing does to the fruit
FRUMAK describes its stone brushing machine for large-stoned fruits such as peaches and apricots. A brushing action separates flesh from stones, with material passing through a perforated drum and stones leaving through another outlet. This process changes the fruit's form.
It should not be treated as equivalent to equipment that removes stones while keeping fruit intact. Ask not only whether stones are removed, but whether the resulting material is suitable for the next process. Review incoming fruit, separated flesh and the stone stream together during evaluation.
| Target | Priority for review | Assumption to avoid |
|---|---|---|
| Product containing fruit pieces | Retention of the required structure | Every stone removal method preserves the same form |
| Marmalade input | Stone separation and preparation for purée | Whole-fruit appearance is necessary in every project |
| Pulp production | Correct incoming material for extraction | A turbo extractor is a universal raw-fruit starting machine |
| Juice input | Conditions required by the next stage | Preparation can be specified independently of downstream processing |

Specify the turbo extractor's incoming conditions
FRUMAK describes the turbo extractor as separating pulp by passing heated product through closely positioned screens and blades. Material that passes through and material that does not are directed to separate outlets. This is a defined application, not a statement that every raw fruit can be fed directly into the machine.
If the proposal includes this equipment, identify the preceding operation and incoming product. Ask which fruit will be used for evaluation, how the output reaches the next section and how separated material is removed. Otherwise, suitability risks being discussed only through the machine's name.
Include seasonal product changes in the scope
A factory handling different fruits through the year needs separate incoming and outgoing descriptions for each. Similar fruit names do not establish identical batch properties. Provide an example fruit list, acceptance approach and seasonal production sequence to reveal shared and product-specific duties.
Review change parts, cleaning access and different settings when moving between products. The objective is not to force every fruit through one machine. It is to clarify which products the proposal covers and which need a separate solution. Unresolved conditions should remain visible in the written scope.
Show product and separated streams on the same drawing
The layout should include removed material as well as usable fruit. Staff access, material transport and maintenance space need to be reviewed against both routes. Final arrangements depend on the building and relevant technical requirements, but these flows can be discussed early.
Define incoming fruit, expected intermediate product and the evaluation method in the acceptance plan. Include the requirements of the following jam, marmalade or juice section. Preparation can then be assessed as a defined process producing a suitable input for the factory, rather than as an independent collection of machines.
KEY POINTS
Before requesting a quotation
- Define the required fruit form before selecting equipment.
- Review stone brushing and extraction with their stated incoming conditions.
- Plan useful product and separated material flows with the next process.
QUESTIONS AND ANSWERS
Frequently asked questions
Does the stone brushing machine preserve whole-fruit shape?+
FRUMAK states that the process changes fruit form. It should not be confused with solutions intended to remove stones while preserving the fruit's shape.
What product condition is described for the turbo extractor?+
The turbo extractor processes heated product through a screen and blade arrangement. The preceding process and incoming conditions must be defined technically.
Which samples help a preparation enquiry?+
Share incoming fruit, desired intermediate material and the finished product. Add the fruit range, production sequence and downstream equipment requirements.
