Quick answer

Select a vacuum cooker around the product and production schedule, rather than its catalogue capacity alone. Define the incoming mixture, target product, usable batch range, complete cycle and available heating services. Then agree on a trial using representative material and measurable acceptance criteria. A suitable purchase is one that meets your daily output requirement under defined conditions. Volume, incoming batch mass and saleable finished output must be recorded separately.

A new jam or concentrated-product project often starts with a question about vessel size. The more useful question is how much acceptable product can leave the process within the available production window. Two recipes may require different operating schedules even when the equipment body is the same size.

Bring production targets, maintenance access and cleaning requirements into one enquiry. Operating settings require product-specific technical assessment. An agreed trial plan helps production, maintenance and purchasing teams evaluate the proposed cooker against the same requirements.

1. Prepare the product brief before selecting the vessel

Provide more than a product name. Include representative material, its incoming condition, whether pieces must be retained, the intended finished consistency and the range of batch sizes. If several recipes will share the cooker, identify the commercially important products and those expected to be most demanding. Do not allow a trial with the easiest recipe to represent the entire portfolio.

Describe how success will be judged. Colour comparison, a specified solids measurement, piece integrity or transfer behaviour may be relevant, but your product team must define the method and acceptance limits. A reference sample is useful only when the participants understand when and how to compare it.

  • Which recipe establishes the main production requirement?
  • What is the smallest commercially useful batch?
  • Who will approve the trial product, using which method?

2. Separate catalogue information from project guarantees

FRUMAK lists several vacuum cooker models and their technical data. Use those records to start the discussion, without deriving usable vessel volume or guaranteed recipe output from a model name. Nominal capacity, working volume, incoming batch quantity and finished-product mass describe different aspects of the process.

Also distinguish pressure from consumption. A connection condition expressed in bar does not tell you the hourly steam or air demand. Ask for flow, temperature, simultaneous demand and connection locations where relevant. An empty entry in a technical table means further information is needed; it should not be interpreted as zero consumption.

3. Plan around the complete batch cycle

Record loading, processing, sampling or release, discharge and preparation for the next batch. Looking only at active cooking time can overstate daily output. Product changeovers and end-of-shift cleaning also need a place in the operating schedule.

Illustrative example only: a complete cycle of 90 minutes within a net production window of 450 minutes allows five complete cycles. This is not a performance claim for any FRUMAK model. Confirm actual cycle time with the intended product, and decide how the schedule treats a batch that cannot finish before the shift ends.

4. Compare configurations against the same decisions

Use the comparison sheet to establish fit, rather than to reward the largest vessel. Different configurations can suit different product schedules. Resolve unanswered items before treating two prices as equivalent.

5. Connect the trial record to the ordered equipment

The FRUMAK product description explains vacuum processing and sampling arrangements. For your project, specify which recipe, equipment scope and measurement plan will demonstrate those functions. A general product page is not an acceptance report for a particular recipe.

Keep the incoming and finished samples identifiable, along with the trial date, configuration, observations and complete elapsed time. Ensure the quotation explains how the tested equipment relates to the delivered system. Include upstream feeding and downstream transfer, so the decision covers an operating process rather than an isolated machine.

KEY POINTS

Before requesting a quotation

  • Keep working volume, batch quantity and net daily output separate.
  • Do not treat pressure as utility flow or energy consumption.
  • Make the trial recipe, acceptance method and full cycle record part of the enquiry.

QUESTIONS AND ANSWERS

Frequently asked questions

Can I read a litre-per-hour figure directly as kilograms per hour?+

No. Product density and the meaning of the quoted capacity must be established first. Working volume, cycle time and whether the measurement concerns incoming or finished product also affect the calculation.

Can one vacuum cooker handle several recipes?+

That requires assessment of the products and selected configuration. Discuss representative trials, minimum batch size, discharge arrangements and changeover time before assuming the whole portfolio is covered.

What information should accompany a quotation request?+

Include the product list, representative sample or recipe information, daily output target, batch range, shift schedule, site drawing and available utilities. Agree how confidential formulation information will be shared.
