Vacuum Vessel
A vacuum vessel is an industrial container that uses reduced pressure to heat, process, concentrate or cook products at lower temperatures.
Open the product catalogueWater that normally boils at 100 °C boils at substantially lower temperatures, such as 60–70 °C, under vacuum. This principle allows heat-sensitive products to be processed without damage or loss of colour and texture.
Product is drawn from the preceding vessel using the negative pressure generated by a vacuum pump. A steam heating system is used in the jacket.
The average boiling temperature of products cooked under vacuum is 65–70 °C. A sampling rod allows samples to be taken without breaking the vacuum. After processing, product is released through the discharge valve.
